From childhood dishes that he still indulges in, to pivotal moments through his life that helped him get to where he is today. We will explore past memories and the future, through a ten course menu.

This story is special — Simply Fish was the first restaurant Nico ever had, and I was with him since the start. Through our ups and downs, we stuck together and still do today — supporting each other in business and at home. We’ve been through so much together and we are grateful for everything. He’s like a brother to me.
This dish has been created by Mick. He is a talented chef and my right hand man. He’s been by my side and held the fort with me for years. The accolades we received this year would not have been possible without him.
‘Late Night Snack’
We work late nights as chefs and my go-to after work snack has to be chicken satay. I’ve refined this a lot, to ensure it is tasting menu worthy. I hope this is just as tasty as your go-to late night snack!
When coming in, did you see the deli shop next door? Well this is where I order my unusual roll. The next time you’re in the area pop in and ask for Mo’s Roll — they’ll know what to give you.
‘Christmas at Nico’s House’
When moving here in 2014, I didn’t know anyone. I had no family or friends. After only knowing Nico for a couple of months he invited me round to his home for Christmas dinner. Ever since then, it’s been our tradition to have a cannelloni. He’s like a brother to me and I cherish every Christmas with them.
111 started out many years ago as 111 by Nico, and the story of this dish begins here. At the time, five year old Lucy was our youngest customer ever for our tasting menu. Although back then she would have pasta and butter, we have taken inspiration from this and adapted it into a delicious pasta dish. Lucy still visits us now — thank you for being our longest visiting customer, ever!
111 by Nico 'Flaming Brûlée’
After Simply Fish, Nico opened what you may know as 111 by Nico. This is where we really knew we were onto something with affordable tasting menu experiences. This was one of the first desserts we served together.
Remember when I said Nico and I supported each other through everything? Well, this year has been our biggest yet. With Six by Nico growing, I have helped Nico launch new locations and one of my favourites was Cardiff. This dish is an ode to my time there and trying new local delicacies.
“New York, New York”. Well what more can I say than I am a part of it! This menu was first created in 2018 by myself, Nico and Andy Temple. Sadly, we didn’t travel there for this one but it is on my bucket list.
This year I have supported Six by Nico's menu creation quite a few times. This dish has by far been one of my favourites. It allowed me to push my chef skills to the test and create an indulgent dessert that packed a punch.
