Starting out in Glasgow young & ambitious, Modou joined 111 by Nico in 2014 part-time as a Kitchen Porter. Instantly impressing Nico with his desire to learn as much as possible about the kitchen… his knowledge, ambition & culinary creativity grew rapidly and so too, Modou quickly making his way to Head Chef at 111.
Being entrusted as Head Chef, Modou has been the backbone behind much of the team’s success – pioneering some of 111 by Nicos most creative menus; from Total Trust & Trust to the newly popular 10-Course Tasting menu, and even going on to train staff as part of Nicos Academy platform, Modou has ensured 111 has grown from strength to strength over the years. From this, the restaurant has truly risen to great acclaim within the industry, Modou has helped 111 secure its title as a 3 AA Rosette establishment in Glasgow’s West End.
Staying true to 111’s roots, 111 by Modou will offer the same delicious food we all know and love, but in a fully refurbished setting – ensuring guests are able to truly begin this new journey with Modou and the team.
